Last week I tried two new recipes, both from this blog post by April.
I think we will like the enchiladas... but I messed up when doubling the recipe (for a 9x13 casserole dish). And, I ended up not having all the ingredients and had to "wing it," but we ate it all. I will warn you that this recipe was very hard to follow... and it leaves out the chicken. (I used about 4 cups of chicken.)
As for the chili... we ate it, but none of us really liked it. But, I think I didn't like the Great Northern Beans. Next time I will try a different white bean. Maybe it just needs more chiles.

Thanks for the feedback! I looked back over my post, and you're right--I could use a little work on writing out recipes a little more clearly. Sorry you didn't like the chili! We really liked it a lot, but everyone's tastes are different. I've found that not everyone is a fan of white chili. I will say if you have a chance to get your hands on the Dining On A Dime cookbook (where I got the enchilada recipe), you should do so. You might find it at the library under the title "Not Just Beans." It has been such an excellent resource for me for cooking from scratch on a limited budget.

Chili is a hard one.
I have a hard time enjoying acidic foods myself.
I've played around with so many recipes, but never really marking down what I did, so its like starting over every time I make it, LOL!
